I am starving. Day 17 of this Whole30 cleanse and I am so sick of meat- I want to dive my face into this bowl of lentils. This is my day 31 meal of choice. With 4 glasses of Pinot Noir.
The only thing convincing me to stick to this cleanse is the Whole30 timeline and how Ive lost about 10 lbs and my skin is radiant. A thinner, righteous, more enlightened me will recap for you when this is all over.
For now, if you are living your life and looking to make an incredible dinner- Here is my favorite tested over and over again lentil recipe: Ina Garten’s Vegetable Lentil Soup served with avocado and a homemade chipotle sour cream.
There is quite a bit of chopping involved to get this going but if you don’t have a toddler this can still be a weeknight meal. There is Jared babysitting in the back.
Here are my modifications:
- Use only 2 quarts of chicken stock. This will make it a thicker consistency similar to a chili. When you use the 3 quarts her recipe calls for, its certainly a soup, and you cant add sour cream to soup. We ♥ sour cream.
- I add Herbs of Provence because my Mom got me this super cute little pot of it and it’s lovely.
On to the chipotle! We’ve tried so many and La Morena Chipotle Peppers in Adobe sauce is fantastic. Not too smoky and it’s rich in flavor. It is pretty easy to find in NY too.
For the Chipotle Sour Cream take a whole can of La Morena’s and blend in a food processor until a textured sauce. Store the sauce in a bell jar and keep in the fridge and simply mix with sour cream to serve; as much as desired depending on your spice preference. It’s amazing on…everything.
And Voila! The dish I wish I was eating right now.
